its so refreshing, zesty, smells and tastes amazing...If you need a simple dinner idea, then this is it!
All you need is
a bunch of corriander (stems & leaves),
2 cloves garlic, juice of a lime or lemon and a handful of baby spinach and a glug of Olive oil.
Blitz it all up in a blender and smother over your chicken fillets (or chicken breast). Wrap your bowl in plastic and refrigerate for a minimum of 2hrs.
Bake or pan fry the chicken and serve with a garden salad.
